Fried calamari has become a staple on appetizer menus across the US. This makes me wonder two things:
- Do people really know that they’re eating squid?
- What would squid taste like if not breaded, fried, and covered in marinara?

If your only experience with calamari are those little fried rings, you’re missing out on a hearty seafood with plenty of possibilities outside of that deep fryer.
To start, get your hands on what’s called dirty squid or squid that hasn’t been pulled apart and “cleaned.” Admittedly, this might be a little … intense. Once you have your whole squid, you’re ready to prep it for cooking. The folks at Harbor Fish Market in Portland, Maine have put together a good how-to video.
